OK, so... I was facebooking. And suddenly I saw a picture of some scrumptious looking lobster mac & cheese. The inner piggy of mine immediately started salivating. I oink my way to the recipe from my friend Henry and twisted a little bit with my own spin. It was Orsum!
And this is Henry, who I oink my recipe from. What a handsome fella he is! Thanks Henry!

- ¼ cup finely chopped dill
- ½ lb pancetta
- 1 large onion (sliced)
- 1 tbsp crushed red pepper
- 8 oz elbow pasta (actually, i used campenelle)
- 4 cloves garlic (minced)
- 2 cups heavy cream
- 1 cup smoked gouda
- ¼ cup white cheddar
- 1 ½ lb lobster meat (cooked and chopped)
Brown
the pancetta and onion in a non-stick pan.
Add pepper and garlic towards
the end.
Pour in
heavy cream and cook till almost boiled then mix in shredded cheese, lobster.
(if
the sauce became too thick, add milk or cream or stock)
Mix in
the chopped dill at the end.
Mix
everything together and spread them into a baking pan.
Grate
some extra smoked gouda or mozzarella on top.
Broil for 3-5 minutes.
