Chicken Cacciatore
Chicken Cacciatore is a very popular and probably one of the easiest braised chicken dish. You can use any veggies, herbs and spice you like.
Ingredients:
Chicken Breast 4 lbs
Pancetta 0.5 lb
Mushroom 16 oz
Carrots 1lb
Capers 1/2 cup
Olive 1/2 cup
Red Onions 2 whole
Garlic 10 cloves
Pearl Onion 1lb
Tomato Sauce 24 oz
Fruitie White Wine 1/2 bottle
Cooking:
Finely diced pancetta and onions. Extract fat from the pancetta by browning it in the pan. Caramelizing the onions with the fat from pancetta. When the onions turn translucent, put in all the capers,olives and garlic. Stir fried them for 2 min, then scoop everything up, set them aside for later use. Drizzle a little bit of olive oil and sear all sides of chicken breasts. Pick up all the pieces of chicken, set them aside. Pour enough wine into the pan and scrape the bottom. Lay all the chicken back into the pan and dump the pancetta, onion, caper, garlic & olive on top of the chicken. Halve the mushroom and cut the carrots into small pieces, then put them in along with the pearl onion. Pour tomato sauce and the rest of the wine into the pan and simmer for 45 min. Flip and stir occasionally to prevent burning.
