Stilton Carbonara




Stilton Carbonara
Recipe:

Ingredients:·
1 ½ pint of heavy cream·
1 lb of pancetta , cut into small cube (or 1lb of bacon )·
4 large egg yolks·
½ lb of blue cheese, Stilton preferred.·
Garlic, Onion (I prefer scallion, has a earthier taste to it)·
Lots of freshly ground black pepper·
A good few pinches of crushed red pepper






Instruction:
Crispify cubed pancetta with tons of ground black pepper and crushed red pepper (*if use bacon, excess fat needs to be drained. Pancetta has less fat)·
Set aside for late use·
Chop scallion and garlic and put them into a sauce pan·
Low heat to bring out the aroma (5-10 min), using oil from pancetta/bacon·
Shared ½ lb of blue cheese (freeze it ahead of time so it is easier to shared)·
Put cheese in the pot, give it a quick stir·
Pour in all the heavy cream into the sauce pan, bring it to boil·
Medium heat make sure blue cheese is nicely melted·
Add beat egg yolks into the sauce (the best way to do this is to scoop sum of the sauce into the bowl with beat egg yolk, mix well, and pour the mix into the hot sauce pan)·
Bring the sauce to boil for one last time·
A pinch of salt and pepper

Note:Make sure you have ½ cup of the pasta water (assuming you use the entire box of pasta, which is the right amount for recipe above)to bind the pasta and sauce together.
