Red Wine Beef Stew







This is a rich and flavorful dish for a special occasion.

8.5 lb beef brisket,
Beef broth,
2 red onion,
10 cloves of garlic,
1 cup dried tomato,
1/2 cup oil cured olive,
1 tsp shrimp paste & 2 tbsp tomato paste,
1.5 bttl of red wine <1125 ml>,
4 springs of rosemary, 4 bay leaves,
Sprinkle of crushed red pepper & mustard seed,
Potato, carrot & celery


Cut the briskets in cubes and soak them in a bottle of wine for at 4-6 hours with a little bit of sea salt. Brown all the onion and garlic in a large pot; move all the briskets into the pot without the wine. Pour in enough beef broth to cover the brisket generously. Throw in all the sun dried tomato, olives, rosemary, bay leaves, peppers and mustard seed; simmer the pot in MED heat for 2 hrs. Transfer the rest of the ingredients in to the pot and pour a bottle of wine in it too. Let it cook for another hr then it is ready to serve.
